Job Overview

Performs a variety of duties related to receiving and processing special diet orders, modifying patient menus to meet dietary restrictions and preferences. Responsible for identifying appropriate menu choices for all age groups, fluid restrictions, diet restrictions, food and beverage consistencies.

Responsibilities
  • Performs diet office functions such as receiving and processing diet orders through CBORD systems, updating diet orders to provide appropriate food choices to in‑patients, and tracking diet progression via computer. Demonstrates understanding of basic medical terminology and modified diets.
  • Proficient with Nutrition Service Suite (CBORD) computer program, modifies appropriate menus in CBORD system for patients with multiple diet restrictions or food preferences, double‑checks all printed tray tickets to ensure accurate calculations prior to tray line service.
  • Applies the AIDET program when speaking with patients, assembles and delivers patient trays according to printed tray tickets and delivery schedule, observes patient food intake and reactions and alerts management and/or dietitian of any concerns.
  • Works with minimal supervision, prioritizes workflow, completes work in detail, visits assigned floors, ensures food selections entered into electronic device comply with prescribed diets, maintains department records, reports and files, runs applicable tallies and reports for kitchen personnel.
  • Assembles floor supplies, delivers to inpatient floors per scheduled task, rotates supplies according to HACCP training, properly documents, cleans and sanitizes refrigerators/freezers.
  • Checks and documents refrigerator/freezer temperatures on inpatient floors, informs manager of unacceptable temperatures and follows up with corrective actions, monitors and replenishes office supplies through Warehouse ordering system.
  • Makes and maintains nutrition supplement cardex and inventory, rotates stock, discards outdated product, orders tube‑feeding supplements using PMM, calculates tube‑feeding volume requirements, orders supplies according to par levels.
  • Ensures all work areas are clean and tidy per cleaning schedules and task sheets, cleans using Food & Nutrition Services approved cleaning solutions, completes cleaning sign‑off log daily, reports cleaning needs or broken equipment to Supervisor/Manager.
  • Exhibits excellent interpersonal skills with patients, employees, other departments, and all other hospital customers; attends 100% of monthly departmental and mandatory staff meetings/in‑services/education; cross‑trained to work two additional tray line/dish room positions; rotates within department to meet staffing needs.

    One (1) year in hospitality, retail, customer service or healthcare service field, or six (6) months nursing assistant experience, or six (6) months food service experience within a healthcare setting. Associates degree in Dietetics or Nutritional Science may be accepted in lieu of experience requirement. Preferred:
    Previous hospital experience with diet modifications (e.g., low salt, low fat, no concentrated sweets).
