We are currently recruiting for a Sous Chef at Fermain Valley Hotel, part of Hand Picked Hotels.

Fermain Valley is a 4‑star luxury hotel in Guernsey, with a cliff‑top position offering breathtaking views of the Channel Islands. All 49 rooms are individually designed to create an air of calm, allowing guests to unwind. The hotel hosts three restaurant concepts—Rock Garden Steakhouse, Búho and the Terrace— with award‑winning menus that attract locals and visitors alike.

About the Role

Are you an experienced Chef looking to progress your kitchen management experience? We know the step from Sous Chef to Head Chef can be a big one, so at Hand Picked Hotels we aim to equip our Sous Chefs with the skills they need to take that step. From office and paperwork responsibilities to people‑management training, and further culinary development, we will help you gain the exposure needed to develop your career.

Of course, alongside all of that you get to do what you do best—create fantastic food and lead the team in our professional kitchens.

About You
  • Excellent knowledge and experience of working in a quality‑driven hotel, restaurant or hospitality environment.
  • Enthusiastic and willing to take on new responsibilities, adopting a flexible approach to assist in different areas of the kitchen as business and guest needs dictate.
  • Ability to impart knowledge to junior team members.
  • Stay on top of the latest culinary trends and a desire to learn the next big thing; high emotional intelligence and the ability to anticipate guest needs to deliver a Hand Picked experience.
  • Demonstrated ability to deliver our guest‑experience standards—going above and beyond to ensure guests have a high‑quality, personalised, magical experience they remember, recommend and return to time and time again.
