Position: Pastry Junior Sous Chef (Maternity cover)
Location: City Of London

The pastry kitchen at The Ned produce delicious desserts and pastries to be served anywhere in our hotel, members spaces, or any of our 10 restaurants. Whether that’s a cake for a wedding on our events floor, croissants and pain au chocolate for a breakfast meeting, afternoon tea to be served in Millie’s, or a whole host of desserts for our famous Sunday Feast, the pastry kitchen do it all.

The Ned boasts 10 restaurants each serving a unique style of cuisine from around the world, and as a Demi Chef de Partie you will run service, producing gorgeous desserts to order, perfect to finish off their meal.

Where will you be working?

The Ned and Ned’s Club are a global collection of hotels, clubs, spas, and restaurants for like-minded individuals to meet, work and have a good time. The Ned launched in 2017 in the heart of the City, in the former Midland Bank headquarters. The Ned City of London houses Ned’s Club – a private members’ space, gym and rooftop – alongside a public spa, a full floor of events spaces, ten restaurants and bars and 250 hotel bedrooms.

At The Ned, we have restaurants in almost every cuisine, from pan-Asian to American diner, and Italian to fine dining.

As a junior member of the kitchen leadership team, reporting into the kitchen managers you will:
  • Be working alongside the sous and head chef to lead the daily operation, overseeing the production of our food, compiling the daily mise‑en‑place, and ensuring that all food is cooked and presented to our exceptional Ned standards
  • Support some people leadership tasks – including team recruitment, development and performance chats, onboarding new starters – this is a great role for an aspiring kitchen manager who wants to build their people management skillset
  • Be a guardian of food quality and presentation, monitoring all food leaving your kitchen and providing coaching and feedback to the team where needed
  • Create and monitor a safe and clean kitchen environment, protecting our guests and team from any possible harm
  • Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary

What you can bring to the role:
  • Previous kitchen experience with a proven track record of delivering outstanding food is essential
  • Previous experience of supervising or managing a team is beneficial, but experienced chefs looking to take their next step may be considered
  • Our customers and guests expect the best, so high standards are essential
  • An organised and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards
  • Creative flare is always welcome – our menus change seasonally, and you may be offered the opportunity to support with food design and creation
  • Our kitchens can be high pressure so a calm demeanour and a genuine passion for providing guests with exceptional food is essential
  • Ideally this role is a step on the path to becoming a kitchen manager, so a desire to learn and progress is preferred, but not essential
