Senior Sous Chef – Large Scale Catering Operation – Cape Town

Salary: R20,000 – R28,000 (Negotiable DOE, Live-in)

Kendrick Recruitment is seeking a skilled and experienced Senior Sous Chef to join a high-volume, large-scale catering operation in Cape Town. This hands-on leadership role is ideal for a chef who thrives in a fast-paced environment, manages kitchen teams efficiently, and ensures the consistent delivery of high-quality food.

Key Requirements

  • Proven experience as a Senior Sous Chef in a large-scale catering, hotel, or lodge environment

  • Strong understanding of high-volume food preparation and service standards

  • Excellent leadership, coaching, and team management skills

  • Ability to plan, coordinate, and oversee multiple kitchen operations simultaneously

  • Knowledge of food safety, hygiene, and health and safety legislation

  • Creative approach to menu execution and food presentation

  • Calm, organised, and effective under pressure

  • Strong administrative and organisational skills

  • Flexibility to work extended hours, weekends, and public holidays as required

Key Responsibilities

  • Assist the Executive Chef in the daily management and operation of the kitchen

  • Oversee and coordinate food preparation, ensuring consistency and quality across all dishes

  • Supervise, train, and mentor kitchen staff, promoting a positive and productive working environment

  • Ensure adherence to all health, hygiene, and safety standards within the kitchen

  • Support menu planning, recipe development, and daily prep lists

  • Monitor stock levels, manage inventory, and minimise food wastage

  • Maintain cleanliness and organisation of kitchen and storage areas

  • Assist in managing kitchen equipment, ensuring proper maintenance and functionality

  • Help manage kitchen rosters and staffing requirements to ensure smooth operations

  • Liaise with front-of-house and service teams to deliver seamless guest dining experiences
