Sous Chef - Cape Winelands Fine dinning

About the Role

A leading 5-star property seeks a passionate Sous Chef to support the Executive Chef in managing kitchen operations, maintaining culinary excellence, and upholding food safety standards.

• Supervise daily kitchen operations and lead service in the Head Chef / Executive Chefs absence
• Oversee food preparation, quality control, plating, and consistency
• Support menu development and cost control
• Manage stock, portioning, and supplier coordination
• Support, guide and train junior kitchen staff in food preparation, cooking and plating
• Make sure all food is prepared to the correct standards, recipe and presentation
• Enforce hygiene and HACCP standards as per South African food safety regulations
• Train and mentor junior chefs and kitchen staff

• Accredited Culinary Qualification (minimum NQF Level 5 or above)
• 3-5 years experience in a fine-dining or 5-star kitchen
• Proven leadership and communication skills
• Ability to work well under pressure in a team environment
• Attention to detail and pride in food quality
• Knowledge of HACCP and R638 food safety compliance
• Valid drivers licence and own reliable transport
• Must be eligible to work in South Africa (valid work permit if foreign national)
