Pondaseta Brewing Co – Packaging & Cellar Lead
Job Summary:
The Packaging and Cellar Lead is charged with tasks included, but not limited to, all aspects of kegging and packaging, coordinating with management and brewer(s), handling of raw materials, transfers, fermentation monitoring, yeast handling and pitching, clarification, finished beer monitoring, equipment CIP, and general sanitation.
About The Brewery
Pondaseta Brewing Co began operating in 2018 as a taproom focused brewery and has slowly grown our distribution and total operation. Now we brew for our taproom, a full service restaurant and distribution across the Panhandle of Texas. At our main facility brewers operate a 15bbl, 3 vessel, Premier Brew System, filling 15 and 30bbl fermenters. Packaging sees a mixture of 12oz, 16oz, specialty 500ml bottles, and 1/6 or 1/2bbl kegs.
Our original location, and original 5bbl Premier Brew System operates on a more limited schedule for specialty draft only releases or barrel aging.
Responsibilities and Duties
Work safely
General cleaning and maintenance of workspace
Daily tank monitoring
Dry hopping/other additions
Beer carbonation
Dissolved Oxygen (DO) Management
Fermentation tank and brite tank CIP
Yeast management
Follow QC/QA cellar protocols
Adherence to documentation practices
Forklift operation (Training Provided)
Evaluation of raw materials and communicate inconsistencies
Canning line Operations (set up, QC, QA, Fill, pack-out, finished good handling)
Keg washing/filling
Documentation via physical and digital logs, including Ekos and others.
Maintain Packaging Schedule
Direct other employees for cellar and packaging tasks

Good spatial understanding and dexterity
Ability to climb ladders and work in confined spaces

Ability to handle constructive feedback.
Physically capable of performing daily brewery work; standing most of the day, crouching, lifting 55LBs +, maneuver 160lbs regularly

Documentation is critical, including process deviations, and the resulting decisions, actions and expectations of outcomes.
Timely and reciprocal communication is expected.
High comfort level working independently in a lead role.
Fosters a culture of education, internal collaboration, and continuous process improvement.

Willingness to do tasks outside the scope of the Packaging & Cellar positions

Accessible for remote communication in off hours (limited)
Qualifications
Certified Beer Server / Cicerone preferred
Canning Line Experience required
General beer knowledge required, brewing experience preferred
High School Diploma or GED is required.
Compensation/Benefits
Full Time
Hourly pay rate based on experience/competency
Pay Range: $16-$24 per hour
