Overview
Position Summary: Under general direction from the Restaurant Chef, the Supervisor is responsible for the supervision of the Cook Team in assigned areas to ensure that department standards are met in regards to food quality, presentation and safety. Support the Restaurant Chef to develop the team towards continuous innovation and productivity throughout the Food and Beverage Operation. Ensure a high standard of cleanliness and hygienic practice throughout the kitchen.

- Ensure proper amounts of food are prepared in accordance with production sheets.
- Teach kitchen employees the skills required for their positions, including use and care of steel, knives and other culinary tools, while prioritizing safety and sanitation.
- Supervise production, preparation and presentation of all foods for the casino food outlet to ensure a quality, consistent product.
- Assist in creating and planning menus and daily specials; implement production changes to attract new business and maintain guest satisfaction.
- Ensure optimum staffing levels by coordinating cooks’ schedules.
- Maintain a safe, orderly and sanitized kitchen.
- Ensure all recipes, preparations and presentations meet restaurant specifications and quality standards.
- Improve staff effectiveness through coaching, counseling, training and, when needed, disciplinary action; plan, delegate, monitor and appraise tasks and results in a timely manner.
- Achieve financial objectives by monitoring labor and food costs against budget.
- Ensure food service outlet functions comply with gaming, health, sanitation regulations and established policies and procedures.
- Inform wait staff of any food shortages well in advance and find suitable substitutes when possible.
- Organize an efficient flow of production; check daily events, delegate, and follow up.
- Maintain menus and food quality to standard.
- Ensure cooks prepare a variety of foods in quantities based on the menu and number of patrons served.
- Direct activities of one or more workers assisting with preparing and serving meals.
- Maintain good communication with co-workers and foster a positive, professional work environment.
- Contribute to a team effort and achieve related results as required.
- Manage, lead, and monitor daily production of culinary operations in assigned area; consistently enforce and uphold Casino and Food & Beverage policies and procedures to ensure quality standards.
- Oversee one or more casino restaurants or outlets and assist with special events or product preparation; oversee catering events as assigned.
- Assist in calculating food costs for restaurant menus; maintain cost control records and review food and labor costs with the Executive Sous Chef and Executive Chef.
- Ensure cleanliness and organization of kitchen areas, including at events; maintain sanitation and safety of all equipment following Serv Safe principles.
- Prepare inventories, requisition supplies, and track delivered products.
- Support team member career development through mentoring and coaching.
- Performs other duties as required.
Access to Sensitive Areas: Food and Beverage Operations, and Food and Beverage Storage Areas.
Signatory Authority: Department orders, catering forms, requisitions and personnel-related forms.
Minimum QualificationsHigh School Diploma or GED required unless waived by Human Resources. Three years of related food service experience, including two years in a supervisory capacity. An Associate Degree in Culinary Arts or related field and AFC certification preferred. Serv Safe certification required. Excellent interpersonal, guest service, leadership, communication (verbal and written), analytical, decision-making, inventory control, computer literacy and problem-solving skills are required.
Demonstrated ability to understand cost control methods pertaining to individual menu items. Must be able to pass a pre-employment drug/alcohol screen, background investigation, and obtain and maintain gaming license.
