Job Description
We are seeking an Assistant Chief Steward to support the effective management of stewarding operations at Faena The Red Sea. Working closely with the Chief Steward, Executive Chef, and Food & Beverage leadership, this role helps ensure the highest standards of cleanliness, hygiene, safety, and operational efficiency across all culinary and food service areas. The Assistant Chief Steward plays a key role in maintaining Faena’s luxury standards and sustainability commitments while fostering a safe, well-organized back-of-house environment that enables exceptional guest experiences.
Key Responsibilities- Support the daily management of stewarding operations, ensuring immaculate cleanliness and sanitation across kitchens, back-of-house areas, and food service zones.
- Assist in supervising the cleaning, maintenance, and correct use of kitchen equipment, utensils, dishwashing machines, and related tools.
- Help monitor inventory levels of cleaning supplies, chemicals, and stewarding equipment, ensuring efficient usage and timely replenishment.
- Assist with stewarding staff scheduling, duty allocation, and coverage to meet operational demands.
- Support waste management and recycling initiatives in line with local regulations and Faena’s sustainability goals.
- Conduct regular inspections of kitchens, storage areas, and back-of-house facilities to ensure continuous readiness for health and safety audits.
- Work closely with the Chief Steward, Executive Chef and F&B management to identify risks and maintain full compliance with hygiene and food safety standards.
- Support the training, onboarding, and day-to-day supervision of stewarding team members.
- Communicate job expectations, hygiene procedures, and safety standards clearly to all stewarding staff.
- Provide on-the-job coaching and constructive feedback to support performance and development.
- Enforce adherence to food safety, sanitation, hygiene, and occupational health standards at all times.
- Support the implementation and monitoring of HACCP procedures and preparation for internal and external inspections.
- Stay informed of local health regulations and internal policies, applying best practices consistently.
- Maintain effective communication with kitchen, culinary, and front-of-house teams to support smooth operations.
- Maintain a visible presence during service periods to support the stewarding team and operational leaders as required.
- Minimum 3–5 years’ experience in a stewarding supervisory role within a 5-star hotel or luxury resort environment.
- Demonstrated ability to support, motivate, and develop a diverse stewarding team.
- Strong knowledge of sanitation standards, hygiene practices, HACCP, and food safety regulations.
- Experience in stewarding inventory management and operational controls.
- Familiarity with commercial kitchen equipment and dishwashing machinery.
- Strong organizational, communication, and time-management skills.
- Basic computer literacy.
- A strong commitment to cleanliness, safety, sustainability, and operational excellence.
