Essential Functions
  • Independently performs moderately difficult tasks in preparing quantities of quickly prepared foods such as steaks, chops, cutlets, hamburgers, eggs, salads, and other similar items.
  • Works under the supervision of the Cook II. The Cook I will act independently or assist in the performance of all duties necessary to keep the food services in full operation. Will perform other duties as assigned.
  • Performs duties in a large industrial detention center kitchen under supervision; duties are not limited to those listed and may change based on facility needs.
  • Prepares in quantity by various methods of cooking a variety of foods including soups, sauces, meats, fish, vegetables, and baked goods.
  • Prepares special foods for non-citizens requiring special diets.
  • Plans cooking schedule so food is ready at prescribed times and ensures delivery to housing units as required.
  • Provides measuring, mixing, stirring, cutting, grinding, chopping, and seasoning of ingredients according to recipes.
  • Tests foods for completion of cooking time and adjusts heat controls; monitors baking, roasting, broiling, frying, and steaming as called for in recipes.
  • Monitors carving and portioning into individual servings.
  • Assists in training non-citizen volunteers and monitors daily operations for quality, safety, and sanitation compliance.
  • Reviews menus to determine type and quantity of food to be prepared.
  • Draws required cooking utensils from kitchen storage areas and loads/unloads delivery trucks as necessary.
  • Delivers food to housing units and may assist with loading carts onto trucks, driving, and serving trays to non-citizens.
  • Maintains professionalism, quality, and craftsmanship in all tasks; uses downtime to maintain a clean and orderly work area and keep clerical tasks up to date.
  • Keeps up to date on departmental and facility safety standards and local codes and policies.
Qualifications
  • A high school diploma or GED is required.
  • Minimum one-year experience in large-scale cooking in a commercial or industrial kitchen.
  • Possess a State of Texas Food Handlers Permit.
  • Ability to become First Aid, CPR and AED certified with initial training and maintain certification.
  • US citizen or a person lawfully admitted into the United States for permanent residence and have resided in the U.S. for at least the last five years.
  • Pass a criminal background and consumer credit check (no criminal record).
  • Obtain and maintain a DHS/ICE government clearance.
  • Pass all pre-employment and random drug tests and a medical examination with health requirements.
  • At least 18 years of age and possess current/valid Texas food handlers permit.
  • Knowledge of day-to-day operation of an industrial kitchen and ability to follow written and verbal orders, policies, and regulations.
  • Literate and able to interpret printed rules, recipes, and detailed instructions; maintain poise and self-control in stressful situations.
