This is not an entry-level position. Must have 2 Years Experience Leading / Asst. Head Baker. Overnight Baker – Commissary Sharbert Enterprises | Bozeman Yellowstone International Airport (BZN)Sharbert Enterprises is seeking a skilled and dependable Overnight Baker to support commissary production for our airport food and beverage operations. This role is ideal for a culinary professional who values craftsmanship, consistency, and operational excellence in a fast-paced, high-visibility environment.
Working overnight in our BZN Airport commissary kitchen, the Baker plays a critical role in delivering high-quality baked goods that meet both guest expectations and operational demands.
The products you create overnight are experienced by thousands of travelers each day and set the quality standard for our airport cafés and restaurants.

Schedule & Status- Hours: 12:00 AM – 8:00 AM (flexable)
- Status: Full-Time or Part-Time

Required:
Ability to work a flexible schedule, including weekends and some holidays
- Produce consistent, high-quality baked goods, including breads, pastries, muffins, cookies, and specialty items
- Execute standardized recipes with precision while maintaining excellent flavor, texture, and appearance
- Meet production timelines critical to airport service schedules
- Maintain strong visual presentation standards appropriate for airport retail environments
- Apply finishing techniques that reflect pride in craft and attention to detail
- Contribute creative ideas for seasonal offerings and product refinement while respecting production scalability
- Execute production with awareness of yield, waste reduction, and ingredient utilization
- Follow portion control and recipe standards to support food cost goals
- Store and handle products properly to preserve freshness and quality
- Compile accurate daily and weekly baking order lists
- Communicate inventory needs and production challenges proactively
- Support smooth handoff between commissary and airport locations
- Adhere to all food safety, sanitation, and HACCP guidelines
- Maintain a clean, organized, and professional workstation
- Comply with Sharbert Enterprises’ operational policies and safety expectations
- Professional baking or pastry experience preferred (commissary or high-volume production experience a plus)
- Strong understanding of baking fundamentals, timing, and workflow
- Ability to work independently during overnight hours with minimal supervision
- Reliable, punctual, and adaptable to schedule changes
- Physically capable of standing for extended periods and lifting kitchen equipment or supplies
- Detail-oriented with high standards for quality and presentation
- Organized, efficient, and cost-conscious
- Calm, focused, and consistent during overnight shifts
- Aligned with a culture of servant leadership, accountability, and teamwork
- $22.00 – $25.00 per hour
