Department SummaryMichigan Dining is comprised of nineteen on-campus cafes and markets, nine residential dining halls, Michigan Bakery, and the Michigan Catering unit. Our 500 professional and 1,200 student employees are committed to creative, healthy, and nutritious foods, international cuisines, and sustainability throughout all dining operations.
Position SummaryYou will oversee the daily operation of one or more retail cafes, c-store, or pantry operations. You will report to the Associate Director, Retail Operations, and you will work onsite. Your responsibilities include hiring, training, maintaining employee relations, and scheduling of student employees. You are also responsible for maximizing sales, menu development, food production standards, food safety compliance, product mix, cash handling, merchandising, inventory control, loss prevention, and store appearance.
The Retail Store Manager achieves budgeted goals for sales, labor, expenses, and net profit for operations generating revenues between $500,000 and $1,500,000 or more. For the complete job description, please .
- Be a member of our Michigan Dining Retail leadership team with responsibility for managing the administrative, operational, and developmental activities of one or more operations of Michigan Dining Retail.
- Food and beverage management including menu design, purchasing and working with the culinary team.
- Manage revenues and expenses, analyze food, labor and administrative costs, and reconcile tracking reports for Michigan Dining.
- Demonstrate and enforce Hazardous Analysis of Critical Control Points (HACCP) principles to include the management of the sanitary conditions of food storage, production, serving and other front/back of the house areas.
- Manage the recruitment, selection, training, evaluation and discipline of retail staff.
- Ensure that customer service is following Michigan Dining standards.
- Provide support in sustainability, student engagement, strategic partnerships and community engagement with culture and engagement programs.
- Associates degree in Business, Food Service Management, or Culinary Arts from an accredited institution or a combination of some higher education and five years of related experience.
- Two to four years of operational experience in the retail or hospitality industry at the management level.

- Fri 1st Shift, but varies on business needs to include variable weekday hours, and some weekends and holiday work may be required.
This role may have reporting obligations under Title IX and Clery.

Relocation will not be offered for this role.
