Roles & Responsibilities Raw Material (RM) & Packaging (PM) Control- Conduct visual and analytical inspections of incoming raw materials and food contact packaging against technical specifications.
- Perform sampling of RM/PM upon delivery for microbiological analysis to ensure they meet established safety and quality criteria.
- Liaise with the procurement and goods‑in teams to quarantine non‑conforming materials and raise relevant non‑conformance reports.
- Execute a comprehensive swabbing program to monitor hygiene standards, including:
- Food Contact Surfaces – Post‑cleaning and post‑production swabs of equipment, conveyor belts, and utensils.
- Personnel Hygiene – Hand swabs and overall/glove swabs of production staff.
- Air Quality – Active or passive air sampling to monitor microbial counts in production zones.
- Record, trend, and report results to the QA Manager, flagging any hygiene failures immediately to prompt re‑cleaning and corrective action.
- Prepare media, samples, and equipment for the analysis of finished goods and raw materials.
- Conduct microbiological tests for specified pathogens and indicator organisms (e.g., TPC, Coliforms,
E. coli, Yeasts, Moulds etc.). - Maintain accurate and detailed records of all analytical work in accordance with the local regulatory standards and company policy.
- Monitor incubation temperatures and calibrate laboratory equipment as required.
- Lead the weekly GEMBA walks to observe production processes firsthand and follow up with all the stakeholders in closing all the gaps. Share the report to the team on regular basis.
- Collaborate with production teams to identify potential microbiological risks (e.g., condensation, poor practices, temperature abuse) at the point of value creation.
- Provide immediate feedback and coaching to line staff regarding hygiene best practices observed during floor walks.
- Conduct occasional quality inspections of goods in process, verifying parameters such as temperature, weight, size, shape and visual appearance against production specifications.
- Monitor critical control points (CCPs) related to microbiology, such as cooking temperatures, cooling times, and metal detection.
- Assist in investigations regarding customer complaints with a microbiological root cause.
- Ensure all laboratory activities comply with Global Standard for Food Safety requirements.
- Assist in the validation and verification of cleaning schedules (e.g., ATP testing if required).
- Support the QA team in internal and external audits.
- Education:
Degree (BSc) in Microbiology, Food Science, or a related biological science. - Experience:
Previous experience in a food manufacturing laboratory, preferably within a fresh/chilled produce environment. - Technical
Skills:
Proficient in aseptic techniques, pathogen testing, and environmental monitoring. Knowledge of fresh food spoilage organisms is a distinct advantage.
